Warm Spiced Pear and Walnut Salad with Baby Kale and Balsamic Glaze Recipe

Ingredients

For the Salad:

  • 6 cups baby kale (or a mix of baby kale and arugula)
  • 2 ripe pears, sliced
  • 1/2 cup walnuts, toasted
  • 1/3 cup crumbled blue cheese or feta (optional, or use a dairy-free alternative)

For the Warm Spiced Pears:

  • 1 tablespoon olive oil
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 tablespoon honey or maple syrup

For the Balsamic Glaze:

  • 1/3 cup balsamic vinegar
  • 1 teaspoon honey or maple syrup

Instructions

  1. Prepare the Balsamic Glaze: In a small saucepan, simmer the balsamic vinegar and honey over medium heat for 5–7 minutes, or until thickened into a glaze. Remove from heat and set aside.
  2. Cook the Spiced Pears: Heat olive oil in a skillet over medium heat. Add the pear slices, cinnamon, nutmeg, ginger, and honey. Sauté for 5–7 minutes, until the pears are tender and lightly caramelized. (if you have a grill handy, you may also coat the pears with the cinnamon, nutmeg, ginger and honey and grill until they are tender and slightly caramelized).
  3. Assemble the Salad: In a large salad bowl, combine the baby kale, toasted walnuts, and crumbled cheese (if using). Top with the warm spiced pears.
  4. Drizzle and Serve: Drizzle the balsamic glaze over the salad and toss gently before serving.
